Kansas City’s culinary map is expanding faster than ever. From high-end, immersive multi-course dinners on the Kansas side to comforting, messy street-style fusion in KCK, 2026 has already delivered some incredible new dining concepts.

If your "where should we go for dinner?" routine is starting to feel a bit stale, it’s time to shake things up. Here are four brand-new restaurant openings across the KC metro that you need to add to your hit list right now.

1. Kiyoshi Omakase

The Vibe: Intimate Culinary Theater

Where: 8016 Santa Fe Dr, Overland Park, KS 66204

If you are looking for a true experiential dinner, head over to Downtown Overland Park. Led by Chef Jerry Cao a sushi master with nearly two decades of training, including stints in high-end New York spots. Kiyoshi Omakase is a hyper-intimate, eight-seat counter experience.

"Omakase" translates to "I'll leave it up to you," meaning you surrender your choices to the chef. Over a live, 12-to-18-course progression, you’ll watch Chef Cao slice, torch, and plate seasonal fish sourced straight from Tokyo’s famous Toyosu Market. The $98 menu doesn't skim on luxury either, featuring A5 Wagyu, foie gras, premium caviar, and black truffles.

2. KCulichi Sushi

The Vibe: Bold, Messy, and Deliciously Authentic Sinaloan Fusion

Where: 542 Southwest Blvd, Kansas City, KS 66103

Leave your traditional notions of raw fish and quiet sushi bars at the door. After building a massive, viral following as a food truck, KCulichi Sushi has officially moved into its permanent, 3,300-square-foot brick-and-mortar space on Southwest Boulevard.

Brought to life by owners Jorge Sotelo Garcia and brothers Noel and Fidel Lugo, this spot serves up authentic Sushi Culichi  cross-cultural phenomenon native to Sinaloa, Mexico. Most of the rolls here are fried or baked, heavily loaded, and topped with gooey melted cheese, bacon, beef, chicken, or chipotle cream sauce. It’s loud, it's messy, and it's the first of its kind in the Midwest. Try the Nini Roll (beef, chicken, and bacon) or the Sinaloense (crab and shrimp topped with creamy tampico).

3. The Italian Sausage Company II

The Vibe: The Ultimate East Coast-Style Deli Revival

Where: 518 Grand Blvd, Kansas City, MO 64106

Gladstone's beloved hidden gem sandwich shop has officially crossed the river to open its second location right in River Market. If you’ve ever had their sandwiches, you know this is a massive win for downtown lunch crowds.

They are famous for piling premium meats into freshly baked bread that "slaps." Take a look at their menu numbers: the crowd-favorite #7 is packed with ham, capocollo, Genoa salami, pepperoni, and provolone on a gorgeous seeded Italian loaf with house made garlic aioli. Looking for something hot? Grab their mild or hot Italian sausage subs drenched in "Everything Sauce," or try the Mitchell Schwartz Special a massive, one-pound mountain of local peppered pastrami and Wagyu corned beef.
